Christmas cake ramps up holiday spirit at Acajou Beach Resort

Staff at the Seychelles’ Acajou Beach Resort got an early jump-start to their Christmas spirit last month, in order to prepare a special treat for the hotel’s guests to enjoy over the holiday season.

Acajou Executive Chef Asoka Indraserkara’s Christmas cake creation brought together the Praslin-based hotel’s employees for a fun mixing ceremony to kick off the festive season.

With over 2 kilograms of dried fruits and reserves, more than a kilogram of nuts and a combined litre of rum and brandy, there was no shortage of preparation required for both the cake and its decorations.

The traditional fruitcake has up til now been absorbing the aromas, flavours its varied ingredients and spices, for individual portions to be offered to guests starting Christmas Day and throughout the rest of the holiday season.

According to Chef Asoka, the ceremony was a unique way of bringing in the participation of the hotel’s management and staff, “with the wishes of arranging a beautiful evening for all the clients who have chosen to spend with Christmas with us.”
